I make a mean rice pilaf with brown rice which is oh so healthy for you.
Here is the recipe that my husband said would make him forget white rice forever.
Serves 4:
1 diced carrot
1 diced zuchini
1/2 cup diced onion
1/4 cup diced bell pepper (any color you like is fine)
1 clove garlic
1 cup brown rice
2 cups liquid (I use chicken broth but you could use some wine and water or orange juice or a combination as long as you have 2 cups liquid)
2 Tbsp olive oil
1 tsp salt
1 tsp pepper
Add oil to pan. Sweat all the vegeables on low heat for about 6 minutes or until soft.
Add garlic and rice to the pot cook 2 minutes more coating the rice with the oil and vegtable juices and stiring to make sure nothing sticks to the bottom of the pan.
Add broth, salt and pepper and bring to a boil.
Cover pot with tin foil and the lid of the pot to really seal in the steam and turn down to really low heat.
Cook for 50 minutes. Stir, serve.
