Curry Diva's Curried Squash.....

There is no one like Curry Diva Heather Jans who you can catch at the Blue Plate Restaurant group on Monday Nights.
Here is her favorite Thanksgiving side

Curry Diva's Curried Squash.....

2 to 3 lbs Butternut squash (cut up into bite size pieces)
1 cup dessicated coconut (toasted)
1 onion chopped
8 cloves of garlic crushed
2 inch piece of cinnamon stick
1/2 tsp of ground cardamom
1 tsp of cumin
1 Tbs of coriander
1 Tbs spoon of crushed red chilies - optional - ( if you want it spicy)
2 cups of coconut milk
1 tsp of ground thyme ( or 2 sprigs of fresh thyme cut up)
1/2 sick of butter and 1 Tbs spoon of olive oil
Salt to taste

method....
* (dry roast or toast the dessicated un sweetened coconut and set it aside)
1... heat up the olive oil and better till it melts
2. Add the onions and garlic and brown for a few mts.
3. Add all spices and mix for a few mts...
4. Then add the liquid - coconut milk and some water ( Add as much as 2 cups of water for sauce)
5. Add the squash and salt to taste and cook till the squash is done...
6. Last throw in the toasted coconut..and mix it all together...

Best side dish for your Thanksgiving meal!!!
